WINTER HASH BROWNS
This is something a friend and I came up with on a
chilly winter night.. it's simple, hearty and super delicious!
1 potato
1 yam
1 sweet potato
1/2 red onion
1/2 sweet onion
few cloves of garlic
1 tbs good high heat oil such as walnut
salt and pepper to taste
grated parmesan for the top
Pre-heat oven to 400.
Slice/chop potatoes and yam into potato chip or thicker
slices.. thinner will crisp up and thicker will be chewy, I find a combination
of both is the best.
Thinly cut onion and garlic and combine to a 1/2 inch
deep baking sheet with oil, salt and pepper mixed in well.
Cook 20-30 min. or until they brown to your liking.
Enjoy!! ***************************
