TJ Vanderpool is a gifted pianist, composer, and co-founder of the jazz fusion band Global Affect. TJ served in the US Army and has a strong dedication to our Veterans. He also supports music education for children and anti-hunger causes. He kindly shared one of his favorite breakfast recipes.

FROM THE KITCHEN OF TJ VANDERPOOL
BREAKFAST WITH TJ
cast iron skillet
Grapeseed oil ... coat skillet till u have a tiny puddle
Butter .... 1/4 stick
Garlic...press 4-6 garlic cloves to your liking
Onion...finely diced
Slow hit the grapeseed oil and add ingredients when hot....add in
Turmeric
Curry
and a couple pinches of cayenne pepper
Simmer for a couple minutes...
Add one swai fish filet.....cover the skillet for a couple minutes...flip the fish; recover. As you flip add a little butter to keep the fish from sticking...recover for a couple minutes.
Take fish out; set on a warm plate. (fish won't get cold)
Add a little butter
Add 3-4 organic eggs
1/8 of a cup of vanilla almond milk
A little sea salt
Scramble to your liking
Dish the scrambled eggs alongside the fish.
Toppings:
Diced red, yellow, green bell peppers
Diced red tomatoes
Sprinkle some alfalfa sprouts
and slices of avocado
Ambiance:
Porch overlooking the ocean or your backyard enjoying nature!
