Sunday Lane

Sunday Lane is a gifted singer, songwriter, and pianist.  Her songs have been featured on the CW's One Tree Hill and her albums, Bring Me Sunshine and From Where You Are, have earned rave reviews.  Sunday is also a supporter of anti-hunger causes and kindly shared one of her favorite recipes.



4 sweet potatoes
2 1/2 Tbsp. olive oil
4 chipotle chilies in adobo sauce, minced
2 garlic cloves, minced
2 Tbsp. honey
2 tsp. cider vinegar
1 1/4 tsp. salt
1/2 tsp. cinnamon
1 tsp. cumin
6 boneless, skinless chicken breasts

Preheat oven to 400 degrees.  Peel the sweet potatoes and cut into 1-inch pieces.  Coat the sweet potatoes with olive oil and scatter on the bottom of a baking pan. Roast for 15 minutes.
Rinse the chicken breasts and pat dry.  Combine the chilies, garlic, honey, vinegar, salt, cinnamon, and cumin to form a paste. Rub the paste onto each chicken breast.
Place the chicken breasts on top of the sweet potatoes.  Roast until the chicken is cooked through, about 25 to 30 minutes. Garnish with cilantro, if desired.
Serves 6.
