Brooke Alyson



Brooke Alyson is a talented singer/songwriter who performs as lead vocalist for Nightbird, Sister Honey, and Black Jack Davey.  Her performances at festivals throughout Texas have received rave reviews.   Brooke is also a supporter of anti-hunger causes and kindly shared one of her favorite recipes.

BROOKE'S BLUEBERRY MUFFINS


1 1/2 c. flour
3/4 c. sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. oil
1 egg
1/3 c. milk
1 c. FRESH blueberries

strudel topping:
1/2 c. brown (or a mix of white/brown) sugar
1/3 c. flour
1/4 c. butter
1 1/2 tsp. granulated cinnamon
1 tsp. real vanilla extract (optional)


Preheat oven to 400 degrees. Grease or line muffin cups. We make these muffins big! Combine : 1 1/2 cup flour, 3/4 sugar, salt and baking powder in bowl. Add oil into measuring cup, add egg and enough milk to fill cup. Mix this with flour mixture in bowl. Gently fold in blueberries. Fill cups to top. (Don't skimp.) Sprinkle with crumb topping (strudel).

Crumb topping/strudel : Mix 1/2 c. sugar, 1/3 c. flour, 1/4 c. butter (NOT melted - cool or room temperature), 1 1/2 tsp. cinnamon, and vanilla. Mix with fork, sprinkle over muffins BEFORE baking.

Bake for 20-25 minutes in pre-heated oven or until done.

You should end up with yummy big beautiful blueberry muffins- like you'd get in a bakery!
